Cakes by Monica was started in December 2002
with the idea of preparing gluten-free cakes for those with gluten malabsorption particularly celiac patients but also those with autism and other food allergies.
My mother instilled in me a great love for cooking and especially baking. Throughout my 22 years as a veterinarian, I have tested my baking skills on the staff at the animal hospital. My business associate and one of our receptionists proved to be quite a challenge because of their celiac disease. I started experimenting with gluten free flour sources over the past 19 years and only through much trial and error have I been able to perfect those recipes, many of which are my mothers.
I have gone to great lengths to insure my cakes are gluten free. They are prepared to order with no freezing, additives or preservatives. They are made in a completely gluten free kitchen.
I have two kitchens in my home. One serves as the professional bakery and the other as my personal kitchen. Originally both kitchens had their own cooking equipment however, in the fall of 2006 I was diagnosed with celiac disease after suffering with gastrointestinal symptoms my entire life. Needless to say, the transition to gluten free living was easy. Since then, I have made both kitchens gluten free thus doubling the baking capacity.
In an expanding effort to provide excellent products to my customers I have expanded out the product line to include, wedding cakes, grooms cakes, baby & wedding shower cakes as well as cookies, pies, cheesecakes, muffins & dessert bars. All of course are gluten free and have the same taste and texture as non-gluten free baked goods.
To meet the needs of individuals with other dietary allergies, we offer a limited number of items that are egg free, lactose free and sugar free.
I am constantly striving to keep up with the suggestions of my customers. Therefore, if there is a particular cake or other baked item (excluding breads) that is not on the list, please feel free to make some suggestions. As always, your satisfaction is 100% guaranteed. Dear Monica,
I have to tell you that the German Chocolate 3 layer cake you made for my birthday this year was the talk of the party. As a matter-of-fact it was so good that I didn’t want to share. I only gave small pieces to my friends and family so I could keep it to snack on for myself.
Thank you so much! Not only did it look beautiful but it tasted as good and any gluten cake I’ve ever had.
